Hello, this product uses gas and is not listed as being able to use steam. We do carry many products that use steam though, such as item 441795. Item 380172 can have either a draft diverter or a draft hood for venting, so a vented hood may not be needed additionally. QUESTION
can this oven work 24h?
ANSWER
Hi. I've read that people use this oven to cook roasted meats for over 24 hours, so it could work. They also combine this with the Cook and Hold feature (on item 838260) to have the oven on for a certain period of time and then shut off automatically.

QUESTION
I was looking at the Model#DFG-100-3-S.... for comparison (hope I wrote down the correct model#). is there a difference between this one and the Model#DFG-200 ? or is one just an older model # series?
