This Mercer Culinary® Asian Collection 10" Sashimi Knife is great for slicing and cutting large pieces of fish. It is also know as a yanagi or sujihiki knife, and is the equivalent of a western slicer. Its single-blade edge is taper ground and it is finished with a natural balsam wood handle.
