QUESTION
Being alot less expensive than thbe 72K, I wonder what is important 54K vice 72k. I plan on opening a small bakery and don't know the advantage of a 72 over a 54.

ANSWER
The 54,000 BTU will be fine for your needs..BTU's describe the power of the oven..the 72,000 will heat up faster but both will do the job
