QUESTION
will this unit keep food at new regulation temp of 38% to pass health dept inspection?

ANSWER
This is a non-refrigerated unit which depends upon use of Coldmaster pans or ice baths to present foods to the customer at the appropriate temperature. When used with Coldmaster pans, frozen in accordance with the instructions, and using pre-chilled foods the Coldmaster pans will keep food temperatures at 40 degrees Fahrenheit or less for up to 8 hours. In the use of ice baths, or foods not pre-chilled responsibility for maintaining temperatures would rest with the operator. Use of the product safely is the responsibility of the customer.
