Blodgett bakery depth convection ovens are known for their trouble free operation. These ovens allow you to load pans in from left to right or front to back, and that gives you increased production. These ovens feature a full angle-iron frame, a double-sided porcelain oven liner and rigid frame insulation. Blodgett bakery depth ovens offer a stainless steel exterior with dual pane thermal glass on the oven door. Blodgett bakery depth ovens are stackable to save space.

I was looking at the Model#DFG-100-3-S.... for comparison (hope I wrote down the correct model#). is there a difference between this one and the Model#DFG-200 ? or is one just an older model # series?

Hi. The DFG-200 is bakery depth, while the DFG-100 is standard depth. can this oven work 24h?

Answer:

Hi. I've read that people use this oven to cook roasted meats for over 24 hours, so it could work. They also combine this with the Cook and Hold feature (on item 838260) to have the oven on for a certain period of time and then shut off automatically.

1. With the build in hood, does this preclude having to install a vented hood? 2. Is steam available? 3. Dealers in Los Angeles area 4. Readily available or do they have to be ordered?

Answer:

Hello, this product uses gas and is not listed as being able to use steam. We do carry many products that use steam though, such as item 441795. Item 380172 can have either a draft diverter or a draft hood for venting, so a vented hood may not be needed additionally.
