I use this braiser at home, and while it looks very fragile it is not, and it cooks in that unique way that only clay can achieve.

I cook everything that takes a medium depth, large bottom pan in this. Scrambled eggs, pork chops, anything braised, chicken a'la orange etc. I love the large bottom area for browning. The pan is very attractive and goes from stove top to oven to table for a beautiful presentation. It is very easy to clean-up. If something sticks,a a little soak will loosen it. Emile Henry has high quality products.

I use this almost like a slow cooker. I can cook with this without worry since I can control it with a very low simmer. It retains heat beautifully.
