Its high impact ABS plastic shell surrounds a non-toxic gel core that will hold food at or below the HACCP-recommended temperature of 41°F for up to eight hours - just freeze the empty pan for eight hours or overnight before filling it with pre-chilled ingredients and you're good to go. This pan works great with salad bars and buffet tables, or it can simply be used for storage by pairing it with the matching size of lid.
