The Matfer Bourgeat round frying pan is made of black steel and is an excellent heat conductor. These pans are extremely strong and will last for years. Wash this fry pan in hot water without soap and wipe with paper towel. Store in a dry place. Season before use following the manufacturers instructions. Help preserve the nonstick coating by using Matfer Bourgeat Exoglass® utensils, items # 308848, 308849, or 308859.

    INSTRUCTIONS FOR SEASONING FRY PAN:
  • Before use, wash pan under hot water in mild detergent, use a bristle brush to scrub all protective coating, proceed by thoroughly drying pan.
  • Place in pan the following ingredients and saute on medium heat while swirling around entire pan. Amount of ingredient will vary depending the size of pan i.e. medium pan use 1/3-cup oil, 2/3-cup salt, & 2 whole potato peelings. Discard after sauteing for 10 minutes.
  • Repeat step 2 again.
  • After processing steps 2 & 3 use oil with paper towel and wipe entire pan.

All stove top frying. This is the best frying pan I have used. Better than my All Steel and any Teflon coated pan. Even heat, easy to clean

Matfer Bourgeat 062005 11-7/8" Round Frying Pan With Iron Handle
After seasoning the pan as described in the materials, it has become one of my favorite pans. It acts non-stick and I pan fried fish in it the other night and it turned out marvelous. That's not something you can do in regular pan that is non-stick. The weight of it is a little heavier than some of my other pans, but the handle of the pan is very sufficient and it didn't seem to heat up when in use, though I do wish the handle were covered.) You just have to remember to rinse it with hot water to clean, dry it, put it on the burner to completely dry it, then coat it with a slight amount of oil before storing it. I'm glad I purchased it, though it took over 6 months to get it because it was back ordered.

This is a great pan for fried eggs and it is a great pan for sauteing anything. I'm very pleased I waited the five months to get it.

is the 11 7/8 dimension the top of the pan or the bottom where you cook. I need a crepe pan but I cannot afford the price for a 12 inch.

ANSWER
The diameter measurement is the diameter across the upper rim. The diameter of the cooking surface is approximately nine inches.
