These Thermalloy® fry pans feature a 2‐ply construction of stainless steel and aluminum. The interior is stainless steel that is very hard and non-porous – so the pan will not warp nor react with acidic foods. For best results, Thermalloy® stainless steel cookware should be pre‐seasoned prior to use. Proper seasoning will aid in food release. Pre-seasoning Instructions: Preheat the pan for 3 -5 minutes on medium heat and then add a couple drops of water. If the water beads up then add a small amount of cooking oil to swirl around the inside of the pan. Once the oil just begins to smoke, add your food which will sear in the pan and allow for turning and flipping without sticking. Preseasoning will need to be repeated after the pan is cleaned washed and ready to be used again.

QUESTION
(1) What are the 2 layers? Aluminum and SS (like the Carlisle SSAL 2000?) (2) I do not see this item on the Browne Foodservice website. When was it introduced?

Hi, this fry pan features a 2-layer design of stainless steel interior and aluminum exterior. If you go to www.brownefoodservice.com and click on the Browne Smallwares Catalog, you can view this item on page 76. Unfortunately, I am unable to verify when exactly this item was introduced. Thank you.
