Vollrath® Cayenne® 10 lb. Countertop Electric Fryer

This Vollrath® Cayenne® Countertop Electric Fryer is ideal for product specific applications. It features a compact design and has a lift-out, one-piece stainless steel tank with carrying handles. This fryer is thermostatically controlled to 375°F and has quick heat-up and recovery time. Its basket is nickel-plated steel wire with a cool-touch handle. This fryer is ETL and NSF Listed.

Question:

would you need an exhaust hood system for this product. I have an enclosed fryer system and have an exhaust fan in the store but do not have a overhead hood system.

Hi. Yes - The fryer should be installed under a hood in accordance with the latest edition of the Standard for Ventilation Control and Fire Protection of Commercial Cooking Operations, NFPA 96. Thanks!
