QUESTION is the 16" the distance from edge to edge (total diameter) of the pizza pan, or is that measurement the flat portion of the pan . I am looking for 16" in the flat portion, beveled edge, and perforated. I am also looking for separators (lids) that will fit that type of pan. The separator should "lock" onto the edge of the pan and ideally have a shoulder that raises the flat portion of the separator higher (approx 1") than the top edge of the perforated pan to allow for the pizza dough to rise and still not touch or stick to the separator (lid). What are my options, do you recommend anything in particular, and why? I appreciate your prompt response and your time and effort to help me!!! Thanks, Mike
ANSWER Hello, model CAR16SP has a 16" outer diameter and a 15" inner diameter. You may be interested in item CAR17SP, which has a 17" outer diameter and 16" inner diameter. We currently do not carry the CAR17SP, but you can contact our customer service department at 1-866-634-8927 for assistance with obtaining it. American Metalcraft does make pizza separators; our customer service department will also be able to assist you with that. The 17" separator is item 119894. The 16" separator is item 119893. QUESTION What is this pizza pan made out of? It should say in the description! Is it aluminum?
I am looking for a cast iron or steel perforated pizza pan that is not "non-stick". I cook pizza in a 550 degree oven and I don't want to cook at that high temperature on a "non-stick" surface. Also, I don't like to cook on aluminum. Do you have anything like that?
