J.A. Henckels Professional "S" 8" Chef's Knife, also called a cook's knife, is used for chopping, dicing, bias cutting and slicing. Often the knife handle is rocked up and down with one hand while the fingers of the other and rest lightly on the back of the blade, towards the tip.
