This baking sheet is most highly recommended by Cook's Illustrated. I can see why. I bake cookies with it; roast chops, cook chicken breasts, make jelly roll cakes, bake fries, and so many other things. This is the most sturdy baking sheet I have ever owned. I have always had problems with theses type of pans warping in the oven. THIS PAN DOES NOT WARP!!! It is very easy to clean and the rim does not fill with water like so many others I have owned. It is the best!!

Cooks Illustrated recommended this exact model very highly. It is, on average, $15 per pan, compared to the #2 choice, which is $5 (and can be gotten with free shipping on other sites).
I heated this pan to ~400 degrees, and then let it cool down on the gas grates of my stove. They are about 1/8 of an inch off even and it caused the pan to warp as it cooled. Warp by about 1/2 an inch. It is still useable for a lot of things, but for the price I expected more. Bent up sheet pans have a lot of non-kitchen uses, and since you go through them no matter what, any good $5 is probably a better idea.
I bought these because I really like paying a little extra for quality, whenever possible. I say just buy the $5 ones, but obviously I didn't listen to my own advice because this got such great reviews. Don't make my mistake!

I bought this on the recommendation of America's Test Kitchen, and had to do quite a bit of searching to find the heavy 13-gauge model. It performs flawlessly every time, and cleans up in the dishwasher. I especially like the easy-clean open rim design. It's great for cookies and pizza, and with a rack inserted, is the best way to oven-cook bacon, chicken, and roasts.

We have only had the pan for a few weeks so I haven't used it higher than 400 yet. I bought it as a gift for my husband based on the Cooks Illustrated recommendation. So far we have used it for roasted potatoes and chicken and it has worked great!

I ordered two pans based on the recommendations from America's Home Cooking. They are very heavy duty pans. [...] I have only used one so far. I did not temper the pan before using it to roast a small portion of potatoes, and it warped. I will try to temper the other pan before using.

According to Vollrath's instructions, to remove food burnt on the bottom of cookware, boil a mild solution of vinegar and water for 10 minutes to dislodge food particles. For removing discoloration from Aluminum Cookware, boil a solution of two tablespoons of cream of tartar to each quart of water in the cookware for ten minutes. A cleaning guide with more tips will appear in the "Literature" tab of this page sometime tomorrow.

My husband put my new vollrath wear ever pan in the dishwasher. When I stopped yelling at him, I noticed the finish was ruined on the pan. Is it still safe to use without a protective finish? Thank you. And my husband feels very bad about his screw up.

Hi. You can still use the pan, but the pan will have trouble with things sticking…this can be solved with applying a cooking spray or oil to the pan. Thanks!
