QUESTION
Will this pan rust if exposed to h2o everyday? Is the flat usable surface the 18x14 or is that the top outside edge?

ANSWER
Stainless steel does not readily corrode, rust or stain with water as ordinary steel does. However, it is not fully stain-proof in low-oxygen, high-salinity, or poor air-circulation environments. Hard water may leave spots and when heated, leave deposits behind that will break down the passive layer and rust stainless steel if left to sit. Soft water is less likely to have these minerals. There is less chance of rust in soft water than in hard water. The measurements are to the top outside edge.
