This Alto-Shaam® Cabinet can be used as both a holding cabinet and a dough proofer. It has a universal rack design that can hold both standard full-size pans and full-size sheet pans. Halo Heat® technology provides a controlled, uniform heat source that gently surrounds food for better appearance, taste, and longer holding life.
