African Americans were celebrating Juneteenth long before it became <a href=\"https:\/\/www.pewresearch.org\/short-reads\/2023\/06\/09\/more-than-half-of-states-now-recognize-juneteenth-as-an-official-holiday\/\" target=\"_blank\" rel=\"noreferrer noopener\">federally recognized just three years ago<\/a>. These celebrations include foods that have historical roots tied to the slave trade, like soul food. In this article, we reflect on the significance of Juneteenth, the history behind soul food, and highlight two Black culinary pioneers who have left a legacy in the culinary world.<\/p>\n\n\n\n<h2 class=\"wp-block-heading\">What Is Juneteenth?<\/h2>\n\n\n\n<p><strong>Short for \u201cJune Nineteenth,\u201d<\/strong> Juneteenth recognizes June 19, 1865. This was the day that the Union Army <a href=\"https:\/\/nmaahc.si.edu\/explore\/stories\/what-juneteenth\" target=\"_blank\" rel=\"noreferrer noopener\">made it<\/a> to Galveston, Texas, announcing to the people of Texas that all enslaved African Americans were free. Although the Emancipation Proclamation went into effect in 1863, it wasn\u2019t implemented in areas that were <a href=\"https:\/\/nmaahc.si.edu\/explore\/stories\/historical-legacy-juneteenth\" target=\"_blank\" rel=\"noreferrer noopener\">still under Confederate control<\/a>. There were enslavers in Texas who knew about the Proclamation, but slaves in Texas weren\u2019t freed until the Union Army intervened in 1865.<\/p>\n\n\n\n<p><strong>Juneteenth marks the United States\u2019 second Independence Day.<\/strong> Although it has been celebrated in African American communities for generations, it <a href=\"https:\/\/www.indystar.com\/story\/news\/2024\/06\/10\/when-is-juneteenth-2024-national-federal-holiday-whats-closed-june-19-2024\/73968170007\/\" target=\"_blank\" rel=\"noreferrer noopener\">didn&#8217;t become a federal holiday until 2021<\/a>. This day serves as a time to celebrate the independence of African Americans while recognizing that although we have made great strides towards equality, the work is far from finished.<\/p>\n\n\n\n<p>Juneteenth celebrates a pivotal component of African American history. A wide array of foods can be seen at a Juneteenth celebration. <a href=\"https:\/\/www.oprahdaily.com\/life\/a36479941\/juneteenth-food-traditions\/\" target=\"_blank\" rel=\"noreferrer noopener\">Red foods are common<\/a>, signifying the cultures that would have come through Texas in the later years of the slave trade. Soul food is another common cuisine seen at these celebrations. Like the symbolism behind eating red food, soul food has a rich and deep history dating back to the <a href=\"https:\/\/www.un.org\/africarenewal\/web-features\/slave-trade-how-african-foods-influenced-modern-american-cuisine\" target=\"_blank\" rel=\"noreferrer noopener\">Transatlantic Slave Trade<\/a>.&nbsp;<\/p>\n\n\n\n<h2 class=\"wp-block-heading\">Where Does Soul Food Come From?<\/h2>\n\n\n\n<figure class=\"wp-block-gallery has-nested-images columns-default is-cropped wp-block-gallery-1 is-layout-flex wp-block-gallery-is-layout-flex\">\n<figure class=\"wp-block-image size-large\"><img loading=\"lazy\" decoding=\"async\" width=\"720\" height=\"480\" data-id=\"24445\" src=\"https:\/\/www.wasserstrom.com\/blog\/wp-content\/uploads\/2024\/06\/plate-of-food.jpg\" alt=\"A plate of soul food featuring staple foods like fried catfish and mac n' cheese.\" class=\"wp-image-24445\" srcset=\"https:\/\/www.wasserstrom.com\/blog\/wp-content\/uploads\/2024\/06\/plate-of-food.jpg 720w, https:\/\/www.wasserstrom.com\/blog\/wp-content\/uploads\/2024\/06\/plate-of-food-300x200.jpg 300w\" sizes=\"auto, (max-width: 720px) 100vw, 720px\" \/><\/figure>\n<\/figure>\n\n\n\n<p>The soul food that we recognize today <a href=\"https:\/\/www.blackfoodie.co\/the-humble-history-of-soul-food\/\">originated in the Deep South<\/a>, consisting of Georgia, Mississippi, and Alabama. This cuisine\u2014now associated with social gatherings and comfort\u2014was <strong>born from the need to survive<\/strong>. During the Transatlantic Slave Trade, Africans were given minimal food rations that were poor quality, meaning they did not have all the ingredients for the dishes they grew up eating in Africa. However, they were able to adapt to what they had and create variations of these traditional recipes with the rations they were given. Over time, these recipes evolved into the soul food we recognize today.<\/p>\n\n\n\n<h2 class=\"wp-block-heading\">Culinary Pioneers<\/h2>\n\n\n\n<p>Countless people have contributed to developing and evolving soul food and the culinary industry to where it is today. Let\u2019s investigate a few Black culinary pioneers who have left a lasting impact on society.<\/p>\n\n\n\n<h3 class=\"wp-block-heading\">Lucille B. Smith<\/strong> was heavily involved with her community. She worked as a seamstress and private cook until 1927, when the Fort Worth Public School District hired her to be a <a href=\"https:\/\/dallasexaminer.com\/lucille-elizabeth-bishop-smith-the-first-female-african-american-business-owner\/\" target=\"_blank\" rel=\"noreferrer noopener\">teacher coordinator<\/a> in the vocational educational program for Black students. In addition to this undertaking, she continued to cater dinners. In 1937, she was <strong>recruited to build the domestic training program<\/strong> at Prairie View A&amp;M College for professors and instructors. While creating that program, she additionally <strong>formed the first collegiate Commercial Foods and Technology Department<\/strong> that had an apprentice training program, while simultaneously creating five service training manuals. Lucille was extensively dedicated to the development of her community and providing the youth of Fort Worth with quality culinary resources.<\/p>\n\n\n\n<p>The 1940s sparked a blowout decade for Lucille. Originating as a church fundraiser, she created <strong>Lucille\u2019s All-Purpose Hot Roll Mix<\/strong>: the first hot roll mix created. Her invention was an instant success: she raised $800 in profits (today that\u2019s <a href=\"https:\/\/www.saving.org\/inflation\/inflation.php?amount=800&amp;year=1940\" target=\"_blank\" rel=\"noreferrer noopener\">$17,528.34<\/a>) , and orders continued to roll in. This caught the attention of grocery stores, leading her mix to become the first hot roll mix marketed in U.S. grocery stores. <strong>By 1948, she was selling over 200 cases a week<\/strong>.&nbsp;<\/p>\n\n\n\n<p>Her story doesn\u2019t end there. In 1974 Lucille founded <strong>Lucille B. Smith\u2019s Fine Foods Inc<\/strong>., her family owned business which she became president. Her biscuits were served everywhere from American Airlines to the tables of first lady Eleanor Roosevelt and President Lyndon B. Johnson. Lucille\u2019s contributions to the culinary industry can still be seen today (with evolutions to her mix such as Pil<ins>l<\/ins>sbury\u2019s own hot roll mix) and have cemented her place in culinary history.<\/p>\n\n\n\n<h3 class=\"wp-block-heading\">Leah Chase<\/h3>\n\n\n\n<figure class=\"wp-block-gallery has-nested-images columns-default is-cropped wp-block-gallery-3 is-layout-flex wp-block-gallery-is-layout-flex\">\n<figure class=\"wp-block-image size-large\"><img loading=\"lazy\" decoding=\"async\" width=\"720\" height=\"480\" data-id=\"24447\" src=\"https:\/\/www.wasserstrom.com\/blog\/wp-content\/uploads\/2024\/06\/leah-chase.jpg\" alt=\"Photo of Leah Chase with President Barack Obama at Dooky Chase Restaurant. \" class=\"wp-image-24447\" srcset=\"https:\/\/www.wasserstrom.com\/blog\/wp-content\/uploads\/2024\/06\/leah-chase.jpg 720w, https:\/\/www.wasserstrom.com\/blog\/wp-content\/uploads\/2024\/06\/leah-chase-300x200.jpg 300w\" sizes=\"auto, (max-width: 720px) 100vw, 720px\" \/><figcaption class=\"wp-element-caption\">Photo courtesy of the Library of Congress<\/figcaption><\/figure>\n<\/figure>\n\n\n\n<p>Nicknamed the <strong>\u201cQueen of Creole Cuisine,\u201d<\/strong> New Orleans legend Leah Chase started her culinary journey waitressing in the French Quarter, where she was exposed to upscale restaurants frequented by White people. This inspired Chase to <a href=\"https:\/\/www.pbs.org\/newshour\/nation\/famed-new-orleans-chef-leah-chase-who-fed-civil-rights-leaders-dies\" target=\"_blank\" rel=\"noreferrer noopener\">create an upscale dining experience for Black people<\/a>. \u201cI said well why can\u2019t we have that for our people? Why can\u2019t we have a nice space? So I started trying to do different things,\u201d Chase said in an interview.<\/p>\n\n\n\n<p>Those \u201cdifferent things\u201d involved re-purposing the restaurant bearing her father-in-law\u2019s (and husband\u2019s) name from a sandwich shop where black patrons could get lottery tickets into an upscale restaurant where everyone of all races could dine. Sandwiches turned into Creole dishes, and the <a href=\"https:\/\/www.dookychaserestaurants.com\/\">Dooky Chase<\/a> Restaurant was born.<\/p>\n\n\n\n<p>During the Civil Rights Movement, <strong>Dooky Chase became a gathering place for activists<\/strong> of all races. Black and White activists would meet at the restaurant to strategize about voter registration drives and numerous legal cases. Chase and her husband were violating the law by allowing Black and White patrons to eat together, but the restaurant was never raided. This is a miraculous feat considering that segregationists were <a href=\"https:\/\/www.southernliving.com\/culture\/black-restaurants-civil-rights-movement\" target=\"_blank\" rel=\"noreferrer noopener\">&#8220;heavily invested in<\/a> preventing interracial dining from becoming a widespread reality because it spoke to something even deeper: <strong>When people sit down together for a meal, they can\u2019t help but recognize the humanity of those eating with them.<\/strong>\u201d Chase and her husband demonstrated courage during a time when any protest of Jim Crow could result in fervent violence.<\/p>\n\n\n\n<p><strong>Dooky Chase was also frequented by many civil rights leaders<\/strong>. Ernest Morial, the city\u2019s first Black mayor, Thurgood Marshall, and NAACP lawyer A.P. Tureaud would often work together during the day and head to Dooky\u2019s for a meal.<\/p>\n\n\n\n<p>Chase passed in 2019, but her legacy lives on at Dooky Chase. Soul food holds the stories of generations, and culinary pioneers like Lucille B.
