Competition is heating up and businesses are trying to squeeze every penny of profit out of their restaurant. So it isn&#8217;t surprising that there are technology solutions stepping in to help.<\/p>\n<h2>Robot Burgers<\/h2>\n<p>Both the <a href=\"https:\/\/www.wsj.com\/articles\/a-burger-joint-where-robots-make-your-food-1529599213\" target=\"_blank\" rel=\"noopener\"><strong>Wall Street Journal<\/strong><\/a> and <a href=\"https:\/\/www.wired.com\/story\/building-the-ultimate-burger-bot\" target=\"_blank\" rel=\"noopener\"><strong>Wired Magazine<\/strong><\/a> have feature articles on <strong>Alex Vardakostas<\/strong>&#8216; new San Francisco restaurant, <strong>Creator<\/strong>. The point of interest isn&#8217;t the food, but the way that it is cooked. A robotic &#8220;<strong>burger bot<\/strong>&#8221; creates all the restaurant&#8217;s burgers without human intervention.<\/p>\n<p>From the slicing of the brioche bun, to freshly sliced pickles, onions and tomatoes, to toppings applied down to the ounce, the burger is precisely assembled <strong>without the aid of a human cook<\/strong>.<\/p>\n<p>This isn&#8217;t the first foray into robotic burger chefs. We&#8217;ve seen <a href=\"https:\/\/www.bbc.com\/news\/av\/technology-43292047\/burger-flipping-robot-begins-first-shift\" target=\"_blank\" rel=\"noopener\">Flippy, the burger flipping robot in action<\/a>. But unlike Flippy who just turns burgers over on the grill, the new burger bot at Creator takes the process all the way without human intervention.<\/p>\n<div align=\"center\"><iframe loading=\"lazy\" src=\"https:\/\/video-api.wsj.com\/api-video\/player\/v3\/iframe.html?guid=59F0787F-D9FF-4787-A51B-5CCD5F91D7F5&amp;shareDomain=null\" width=\"512\" height=\"288\" frameborder=\"0\" marginwidth=\"0\" marginheight=\"0\" scrolling=\"no\" allowfullscreen=\"allowfullscreen\"><\/iframe><\/div>\n<p>Is this the first step in <strong>replacing human chefs with robots<\/strong>? Perhaps. But keep in mind that robots really excel at repetitive, narrowly defined tasks. It will be a while before we have fully robotic chefs. But the point here is that there are ventures afoot to <strong>take humans out of the equation<\/strong>. And the future may be closer than you think.<\/p>\n<p><strong>Celebrity Chef Daniel Boulud<\/strong> and a group of MIT grads have designed a gourmet restaurant called <strong>Spyce<\/strong>, where the food is prepared by robots. This goes way beyond flipping burgers and may be a window into the <strong>future of the restaurant industry<\/strong>.<\/p>\n<style>.embed-container { position: relative; padding-bottom: 56.25%; height: 0; overflow: hidden; max-width: 100%; } .embed-container iframe, .embed-container object, .embed-container embed { position: absolute; top: 0; left: 0; width: 100%; height: 100%; }<\/style>\n<div class=\"embed-container\" align=\"center\"><iframe src=\"https:\/\/www.youtube.com\/embed\/s6A1KA5vyGE\" frameborder=\"0\" allowfullscreen=\"allowfullscreen\"><\/iframe><\/div>\n<p>&nbsp;<\/p>\n<p>&nbsp;<\/p>\n<h2>We Don&#8217;t Need No Stinkin&#8217; Cashiers<\/h2>\n<p>If you have been in some <strong><a href=\"https:\/\/www.inc.com\/justin-bariso\/mcdonalds-new-kiosks-will-change-fast-food-industry-forever.html\" target=\"_blank\" rel=\"noopener\">McDonald&#8217;s<\/a><\/strong> or <a href=\"http:\/\/www.businessinsider.com\/ap-wendys-plans-self-ordering-kiosks-at-1000-locations-2017-2\" target=\"_blank\" rel=\"noopener\"><strong>Wendy&#8217;s<\/strong><\/a> locations lately, you may have noticed a new addition to the ordering area: <strong>Self-Service Kiosks<\/strong>. These large touchscreen devices are being phased in at many locations. They allow a customer to customize, order and pay for their food <strong>without interacting with a human<\/strong>.<\/p>\n<p>To date, we haven&#8217;t seen any major chain restaurants <strong>completely phase out human cashiers<\/strong>. But as we discussed in our <strong><a href=\"http:\/\/www.wasserstrom.com\/blog\/2018\/05\/14\/googles-ai-set-to-disrupt-the-restaurant-industry\/\" target=\"_blank\" rel=\"noopener\">article on Google&#8217;s new Duplex AI<\/a><\/strong>, it seems like this is an area where human jobs may indeed be at risk.<\/p>\n<p>By using self-service kiosks, restaurants can <strong>reduce the number of employees<\/strong> needed to service their customers, thus, reducing costs.<\/p>\n<p>A subtle variant of this idea is being seen in <a href=\"https:\/\/www.eater.com\/2017\/10\/5\/16428750\/tablet-technology-restaurants-applebees-outback-steakhouse\" target=\"_blank\" rel=\"noopener\"><strong>tabletop tablets used for ordering<\/strong><\/a> in some fast casual restaurants. These tablets also allow customers to order without assistance from a human server, although typically a human would be needed to actually serve the food.<\/p>\n<h2>Card Please, No Cash<\/h2>\n<p>Another trend may go hand-in-hand with self-service ordering: <strong>Going Cashless<\/strong>. There have been quite a few articles on the <a href=\"https:\/\/www.usatoday.com\/story\/money\/2018\/04\/15\/cashless-restaurants-like-tenders-greens-rising-numberat-growing-number-restaurants-cash-no-longer-m\/319618002\/\" target=\"_blank\" rel=\"noopener\">rise of cashless restaurants<\/a> of late. Famous chefs such as <strong>David Chang<\/strong> and <strong>Danny Meyer<\/strong> both have concepts where cash is on the outs. It&#8217;s all about the card now.<\/p>\n<p><img loading=\"lazy\" decoding=\"async\" class=\"aligncenter size-full wp-image-1451\" src=\"http:\/\/www.wasserstrom.com\/blog\/wp-content\/uploads\/2018\/07\/trendwatch-card-photo.jpg\" alt=\"Cashless restaurants are trending. But they are not without both costs and controversies.\" width=\"890\" height=\"593\" srcset=\"https:\/\/www.wasserstrom.com\/blog\/wp-content\/uploads\/2018\/07\/trendwatch-card-photo.jpg 890w, https:\/\/www.wasserstrom.com\/blog\/wp-content\/uploads\/2018\/07\/trendwatch-card-photo-300x200.jpg 300w, https:\/\/www.wasserstrom.com\/blog\/wp-content\/uploads\/2018\/07\/trendwatch-card-photo-768x512.jpg 768w\" sizes=\"auto, (max-width: 890px) 100vw, 890px\" \/><\/p>\n<p>But these cashless utopias are not without their controversies. Some say that going cashless is actually <a href=\"https:\/\/www.eater.com\/2018\/2\/15\/16974980\/cashless-restaurants-credit-card-only-legal-problem-discriminatory\" target=\"_blank\" rel=\"noopener\"><strong>classist and discriminates against lower socio-economic status customers<\/strong><\/a>.<\/p>\n<p>But even setting aside that issue, there are <strong>actual costs involved in going cashless<\/strong>. The primary cost involves <strong>credit and debit card fees<\/strong>. These transaction fees can eat into already thin margins for the restaurant.<\/p>\n<p>Fortunately, many of the current kiosk systems also allow for cash payments, much like self-service checkouts found at grocery stores. However, the research seems to indicate that <strong><a href=\"https:\/\/www.usatoday.com\/story\/money\/food\/2018\/04\/20\/cashless-restaurants-mean-faster-lines-less-hassle\/529481002\/\" target=\"_blank\" rel=\"noopener\">cashless transactions are speedier<\/a><\/strong>.\u00a0 Given this, there may be a move toward more cashless, self-service businesses in the foodservice industry.<\/p>\n<h2>Foodservice Workers: The New Frontier for the Gig Economy?<\/h2>\n<p>The foodservice industry has a central conflict between two trends. First, as noted above, restaurants are looking for ways to reduce the number of employees needed as a way to reduce costs.\u00a0 But at the same time, there is a <strong>shortage of foodservice workers<\/strong> available to fill open positions.<\/p>\n<p>Some pundits have <a href=\"https:\/\/mic.com\/articles\/189312\/one-reason-for-the-shortage-of-restaurant-workers-driving-for-uber-comes-with-better-perks#.0g39w79bG\" target=\"_blank\" rel=\"noopener\"><strong>blamed the shortage of foodservice workers on services like Lyft and Uber<\/strong><\/a> that allow workers to set their own hours and work flexibly.<\/p>\n<p><img loading=\"lazy\" decoding=\"async\" class=\"aligncenter size-full wp-image-1449\" src=\"http:\/\/www.wasserstrom.com\/blog\/wp-content\/uploads\/2018\/07\/trendwatch-gig-photo.jpg\" alt=\"A new service called Pared will match up foodservice workers with restaurants that need help one shift at a time.\" width=\"890\" height=\"499\" srcset=\"https:\/\/www.wasserstrom.com\/blog\/wp-content\/uploads\/2018\/07\/trendwatch-gig-photo.jpg 890w, https:\/\/www.wasserstrom.com\/blog\/wp-content\/uploads\/2018\/07\/trendwatch-gig-photo-300x168.jpg 300w, https:\/\/www.wasserstrom.com\/blog\/wp-content\/uploads\/2018\/07\/trendwatch-gig-photo-768x431.jpg 768w\" sizes=\"auto, (max-width: 890px) 100vw, 890px\" \/><\/p>\n<p>But now a new service intends to use that same methodology to put the <a href=\"https:\/\/techcrunch.com\/2018\/06\/26\/pared-picks-up-10m-to-help-restaurant-employees-live-an-on-demand-life\/\" target=\"_blank\" rel=\"noopener\"><strong>principles of the gig economy to work in the restaurant business<\/strong><\/a>.<\/p>\n<p>A new service called <a href=\"https:\/\/www.pared.com\/\" target=\"_blank\" rel=\"noopener\"><strong>Pared<\/strong><\/a> aims to <strong>connect restaurant workers looking for shifts with restaurants that need help<\/strong>.<\/p>\n<p>Much like an Uber driver, workers can pick up shifts for which they are qualified at a variety of different restaurants in their area. This gives the <strong>workers an unprecedented level of control over their employment<\/strong>. However, critics are quick to point out that working in this manner often means that these transient employees <strong>will not qualify for benefits such as health insurance or paid time off<\/strong>.<\/p>\n<p>So while it may come with some scheduling benefits, being a gig-based restaurant worker probably isn&#8217;t for everyone.<\/p>\n<p>But it does show how the industry is reacting to all the various trends afoot. And it remains to be seen whether workers will embrace the gig-style of work in the restaurant industry.<\/p>\n<p>All in all, the delicate balance between restaurant industry profitability and restaurant workers will continue to be the focus of trends worth watching for quite a while to come.<\/p>\n<p>&nbsp;<\/p>\n","protected":false},"excerpt":{"rendered":"<p>This issue of Trend Watch has a common theme: Restaurant Labor.
