When prepared, chewed, and digested, glucosinolates form biologically active compounds. Isothiocyanates, for example, have cancer-fighting properties.<\/p>\n\n\n\n<h3 class=\"wp-block-heading\">Why Are Cruciferous Vegetables a Superfood?<\/h3>\n\n\n\n<p><a rel=\"noreferrer noopener\" href=\"https:\/\/www.mdanderson.org\/publications\/focused-on-health\/sulforaphane-benefits--how-leafy-veggies-like-broccoli-and-bruss.h13-1593780.html\" target=\"_blank\">Sulforaphane<\/a>, found nearly exclusively in cruciferous vegetables, is one of the key factors in what makes these bitter greens so good for human health. Their low calorie and low glycemic load make them enjoyable for a wide variety of people including those with <a href=\"https:\/\/pubmed.ncbi.nlm.nih.gov\/32337475\/\" target=\"_blank\" rel=\"noreferrer noopener\">type 2 diabetes<\/a>. (But of course, always check with your doctor first.)<\/p>\n\n\n\n<h3 class=\"wp-block-heading\">Why Are Blueberries a Superfood?<\/h3>\n\n\n\n<p>One reason blueberries are considered a superfood is the flavonoid <a href=\"https:\/\/www.ncbi.nlm.nih.gov\/pmc\/articles\/PMC5613902\/#:~:text=Anthocyanins%20are%20colored%20water%2Dsoluble,fruits%20have%20high%20anthocyanins%20content.\" target=\"_blank\" rel=\"noreferrer noopener\">anthocyanin<\/a>, which is also responsible for their blue color.
