QUESTION
Doesthe Vollrath® 61230 S/S 3.5 Qt. Baking / Roasting Pan work on an induction stove-top?

ANSWER
The 61230 Bake and Roast Pan would not work with and induction heat stovetop. The bottom is flat with no core that is needed to transmit the heat evenly. Thanks!

QUESTION
I was wondering if it could be used on top of the stove for making a sauce from the juices of the meat one has just roasted in the same pan.

ANSWER
It can be used on the stovetop to finish off a sauce and we have a customer who bought this pan and made gravy with it.

We use this pan as a general utility roasting pan. It is made of thick enough stainless steel that you do not have to worry about overloading it with weight or denting it. All of the corners are nicely rounded so that it is easy to clean. Other thinner pans have creases or indentations in the bottom to help stiffen the pan, making them more difficult to clean up. Overall this is a good pan for the price and should last a gneration of use.

I cook alot and this is my "go to" roasting and lasagna pan. It is exactly the right size for roasting and cleans up easily. I like the slightly sloping sides for lasagna.

Long ago I bought two roasting pans in two sizes. My favorite dissapeared several years ago. I looked on the back of the larger one I had and got the Wasserstrom name and ordered the smaller pan. I love it the size is great for smaller roasts and heavy enough to make gravy in. The one I am talking about is the medium size one. It is a great pan.
